Soip Amaur is an expression from the dialect of Andria which, literally translated, means “it tastes good”. It is used in the culinary world to describe a particularly flavorful dish.

Story

Our love story with food began from an even greater love story: the one between Antonio and Marilena. For over forty years, our family has lived the land with passion through the farm that represents our roots and the place where we learned the value of quality, patience and respect for what nature can offer. From this deep bond came the desire to open the doors of our home and share what we love most: good food, hospitality and the pleasure of being together. Today, this dream comes to life thanks to the contribution of the whole family. Antonio brings more than forty years of experience gained in the family farm. The land taught him the value of patience, balance and consistency: principles that still shape the way we work and the care we dedicate to every detail. Marilena is the curious soul of the family. A tireless explorer of flavors, she loves studying, experimenting and reinterpreting recipes, working alongside our chefs with taste, sensitivity and a careful eye. Alongside her passion for cooking, she has a natural gift for hospitality: she is the voice that answers every booking request and the smile that welcomes guests at the entrance. Nunzio, with a degree in economics and agri-food marketing and a specialization in food systems management, gained experience as a buyer in large-scale retail, developing expertise in product selection and market analysis, while refining a critical eye for enhancing excellence. Rosita, a Fashion Design graduate, brings a creative vision and aesthetic sensitivity to the project. Always fascinated by the connection between cuisine and art, she inherited from her mother a passion for flavors and research. She takes care of the restaurant's visual identity and communication.

Soip Amaur is located in the heart of Andria's historic center, just a few steps from the Cathedral. The city is known for its gastronomic excellences, such as extra virgin olive oil and burrata, and for the majestic Castel del Monte, built by Frederick II and recognized as a UNESCO World Heritage Site. In our restaurant, you will have the opportunity to taste our own extra virgin olive oil, produced from our family's olive groves and a symbol of our deep bond with this land. The location that now houses Soip Amaur has roots dating back to the 16th century. What was once a stable has been respectfully restored, preserving its most authentic architectural elements. The ceiling still retains the original 16th-century vault, built using the ancient terracotta pignatte technique: a construction system used to lighten the structure, and one that still tells the story of this place today.

Our chef, Savino Pistillo, and our pizzaiolo, Pierfrancesco Peloso, are the mind, but above all the heart, of Soip Amaur. Their cuisine is born from respect for seasonality and the constant search for the finest raw ingredients, which is why the menu changes frequently, following the rhythm of nature. Each proposal is the result of study, creativity and influences from different cultures, blending harmoniously with the gastronomic tradition of Puglia.
